June 30 order

Hi everyone!
As well as the usual suspects (spinach, lettuce, orach, arugula, cress), this week’s order contains a new leafy vegetable: kale. This green is a favourite of our family which we have introduced to the farm. It can be eaten either raw (though I find the flavour a bit strong for this!) or lightly steamed, like spinach.
One of our favourite recipes is Garlicky Garbanzos and Kale:
1 bunch kale
1 tsp oil
4 cloves garlic
1 Tbsp grated fresh ginger
2 tomatoes, chopped (canned are ok, or tomato juice)
2 cups cooked chick peas (or other beans)
1 tsp soy sauce

Heat the oil. Saute the garlic and ginger for a couple minutes. Stir in the tomatoes and chick peas, adding extra liquid if necessary. Cook for 5 minutes. Add the soy sauce and spread the kale on top. Cover and steam until tender. Yum!

Also included in this week’s order are rhubarb, dill, and cilantro (fresh coriander). We hope you are not overwhelmed by the quantity of fresh herbs! Keep in mind that any you are not able to use now can be chopped finely and frozen for your winter pleasure.

This is probably the final week for orach, so enjoy the big leaves!
